Looking for an Easy Vegetable Soup Recipe Like Grandma Used to Make?As a kid, I used to love my mother’s homemade vegetable soup. In the fall and winter it brought comfort and even years later when I made it for my husband, he quickly developed a taste for it as well.
With simple, inexpensive ingredients my mother’s homemade vegetable soup was very easy to put together. Although she had no written recipe for her soup, I followed her around as she made it one afternoon many years ago and made notes of the ingredients and quantities so that I could replicate her recipe.
Below you’ll find her homemade vegetable soup recipe from my childhood as well as other recipes from across the internet that may also suit your tastes.

This homemade vegetable soup recipe includes beef; it’s not a vegetarian dish. It should probably be more accurately described as a homemade vegetable beef soup. However, if you choose to leave out the beef it would obviously be more vegetarian friendly although it would still have the beef broth!

The IngredientsNothing exotic here, you’ll find all of the ingredients at the local grocery store. The recipe will easily feed a family of 4 to 6.
2 medium sized potatoes (peeled/chunked) 2 carrots (sliced) 1 sweet (bell) green pepper (chunked) 1 medium sized yellow onion (chopped) 1 2 stalks of celery (sliced 1/4 1/2") 1 red delicious apple (peeled/chunked) 1 small turnip (chunked) 1 14 oz can whole kernel corn (drained) 1 14oz can green peas (drained) 64 oz V8 (or other brand) 100% vegetable juice 1 lb. beef chuck roast one can beef broth or 2 cups water with dissolved beef bouillon 1 tsp dried basil 1 tsp. oreganoSalt to taste.May use more broth as needed.

Place the chuck roast in the pressure cooker with water. Cook for 20 30 minutes. Remove any fat and cut into bite sized pieces. Meanwhile, peel and chunk vegetables, the apple, and slice the celery. Add to the stock pot with canned or frozen vegetables. Pour in vegetable juice and beef broth (or water with bouillon) and bring to a full boil. Stir in seasonings and reduce heat to medium. Add meat once it has finished cooking in the pressure cooker.

Definitely sounds like a hearty warming winter soup. I’ll have to try this one. I also like the apple idea seems unusual. It could be good with a little grated ginger or chili, to make it into a real winter warmer! 5

Gosport, proudly led out by grey suited assistant manager Mick Catlin, looked just as determined as their fans to enjoy their big day and played their full part in a breasthless end to end first half played at a frantic pace.
Bennett had the first effort on goal, his looping header comfortably collected by Will Norris in the United goal.
But in the fifth minute, a mistake almost cost the Skrill Conference South underdogs as Us’ on loan Portsmouth striker Ryan Bird burst through on goal.
But, as so often this season, Borough goalkeeper Nathan Ashmore came to the rescue, blocking with his legs from point blank range.
Gosport were knocking the ball around with some confidence on the vast, carpet like Wembley surface and, if anything, United looked the more awe struck of the two sides, frequently getting pick pocketed by the tireless running of the Privett Park upstarts.
As a rousing rendition of "Gosport Borough FC you’re the finest football team the world has ever seen" filled the stadium, Borough raised their game further with Brown digging out a shot that flew straight at Norris, then Gosney bursting past one defender and buy replica oakleys squeezing between another two but not quite conjuring up the finish his determined run deserved.

Borough’s hopes of mounting swift revenge attack went pear shaped within five minutes of the second half as the Conference Premier thoroughbreds clinically doubled their advantage.
Liam Hughes undid the Gosport defence with a raking pass from the right and Donaldson pulled left of Ashmore before arrowing a shot into the far bottom corner.
Gosport boss Alex Pike responded by taking off skipper Brown and experienced striker Sills and throwing on the young legs of Dan Woodward and former Folland Sports winger Rory Williams.
But the Hampshire side had barely had a chance to reorganise when Cambridge struck again with an hour gone.
There was an almighty scramble in the area with Borough bodies diving here, there and everywhere to try and keep the danger out.
